Egg Bake Breakfast Casserole (Vegetarian)


An easy egg casserole recipe with a softer & creamier texture somewhere between a quiche & frittata, yet slightly puffy like a souffle. Serve it with your favorite sides for a simple healthy breakfast or make it ahead & cut into squares to reheat for quick morning meals. {vegetarian}

What if I told you I've made this egg casserole every Sunday morning for the past few months? And that my beau who often hates eating the same stuff on repeat has never complained? Well, it's true...and this recipe is that good.


Why has it been in my regular meal rotation? Many reasons.


When I default to making this breakfast casserole every weekend with whatever veggies & cheese I have on hand (yes, I've switched it up several times), that's one less thing I have to think about. Meal planning really is helpful.

Wake up, make a cup of bulletproof coffee & enjoy my lazy morning. Who am I kidding...I usually jump on my computer first thing to do blogging stuff. {sigh} Someday I'll completely unplug and have a day off!

7 Layer Black Bean Dip

7 layer dip is an easy appetizer recipe featuring layers of simple Tex-Mex ingredients like refried black beans, seasoned sour cream, chunky avocado, cheddar and cotija cheese, pico de gallo, and black olives. It's quick to make, inexpensive, feeds a crowd, and is always the first thing to disappear at get-togethers. I'm excited to share one of my favorite cheap & easy appetizers with y'all today: 7 layer black bean dip. It's awesome for game days, holidays, family get-togethers, reunions, birthdays...you name it. 

This time of year lots of folks are looking for tailgating recipes. To be honest, I'm not a huge football fan. I've experienced the magnetic energy of Friday Night Lights in person (my grandma lives within walking distance of a high school football stadium here in Northern Texas). But watching it on TV with a bunch of commercials every few minutes? Not my thing. 

Yes, I grew up with a family who loved football. They rooted for the Chiefs, Cowboys, Jayhawks, and Sooners. But I was always the one hiding in my room reading a book. However, game days and tailgating are also about really good food & drink. That's something I can get behind 100%.

Crock-Pot Mississippi Pot Roast (Paleo, Keto & Whole30) + VIDEO

Insanely delicious fall-apart-tender Mississippi pot roast cooked in the crock-pot with only six ingredients. This easy recipe takes less than 10 minutes to prep and can be made in as little as 4-5 hours on the high setting. Serve with your favorite mashed potatoes or cauliflower + roasted veggies for a healthy & comforting meal. (Gluten-Free, Grain-Free, Dairy-Free, Keto & Whole30)

I almost always keep a jar of pepperoncini (mild pickled chiles) in my fridge or pantry for Italian-style sandwiches. They add SO much tangy flavor. 

However, I didn't start using pepperoncini in other recipes until about 2 years ago when I tried Health Starts In The Kitchen's Slow Cooker Peperoncini Roast. I instantly fell in love, raved about it here and here on Instagram, and started telling my friends & family to fix it.

Naturally, when I saw a new-to-me recipe around that time for a crock-pot Mississippi pot roast that was blowing up all over Pinterest (it might have been The Country Cook's version since it's older - I can't say for sure) I immediately went to check it out.
